You'll find a delectable assortment of classic and unique pies at Windowsill Pies, a homegrown pie speciality bakeshop. Each item is prepared by hand with their signature dough.
The best hand-picked Morello cherries are used to make their famous Morello Cherry Pie, which is topped with an exquisite sugared shortcrust Lattice weave. This pie has a multi-dimensional flavour thanks to the acidity and brightness of the sour cherries, as well as a trace of almond. The pastry shell remained crisp and flaky despite the moistness of the filling.
Other popular flavours at Windowsill Pies include Strawberry Lemon, Banana Almond Brittle Cognac, and S'mores.
The S'mores pie is smooth and chocolaty without being overly rich, with two fluffy toasted marshmallows and homemade graham crackers on top and substantial milk chocolate pudding and dark chocolate fudge with marshmallows inside. The flaky pie crust held everything together while also providing great tactile contrast.
Their Banana Almond Brittle Pie is filled with fresh sweet bananas, salty caramel and crunchy nuts for a mixture of flavours and texture.
Cons: What we felt could be improved
We could not seem to get hold of certain pies or pastries that we saw on their Instagram and Facebook. While most were available, some from what we know are seasonal creations, while others are for special occasions. While this did not come across as a disappointment we wished they made a wider variety as we would surely get a little bored if we ate the same selections too often. Perhaps they could sell a new line creation for a longer period of time (for example 2 months) so more customers can have something refreshing for a change?
What We Liked In Particular From Windowsill Pies Line Of Pies
Apple Frangipane And Rum Pie ($65)
Apple Frangipane and Rum pie was a real comforting sweet pie with distinct notes of rum. It was initially a Christmas special, but Windowsill made it a regular pie on the menu due to the overwhelming response. And how can one creator let go of his beautiful creation that easily, right? The Apple Frangipane is infused with succulent, juicy home-poached apples, slathered with baked almond custard and generously topped with rum-soaked raisins and lightly toasted almond flakes. Take note that this pie has rum (alcohol), so go easy on the young ones! Overall at $65 for a 9-inch pie, we felt this was indeed a “Rum for our money” with such high-quality ingredients, artistry and baking magic.

Banana Almond & Cognac Pie ($63)
There is something so whimsical and out of heaven about this 9-inch banana pie. A sweet banana parfait, almond brittle and fluffy cognac cream. The banana parfait was a perfect harmony of creaminess and airiness, yet so light and delectable. It's mindblowing how they infused such a banana-ey taste into the parfait.
The almond brittle embedded in the delicate parfait was a teaser which courteously interrupted the smooth dreamy textures with episodes of abrupt nutty crunches. The caramelly sweet almond brittle was balanced, as if on cue, by the fluffy cognac cream. Till now, I'm entirely bewildered how Windowsill manages this sourcery of creating this cognac pie. Looking at it from above, it's like a surge of clouds and resembles a white padi field with its geometrically shaped precision circles etched on its delicate surface. Contains alcohol, so young ones, another reminder!

Strawberry Lemon Meringue Pie ($65)
You just have to dig in whenever you see anything as plain, yellow and levelled. The unassuming tangy, refreshing lemon curd has globs of strawberry jam embedded within, and a meringue halo lines the perimeter of the pie, finished off with a torch for that final touch. (Yes, the torch is important, we say!)
This pie is perfect on a summer's day, actually any day. Wonderfully paired with a fruity aperitif, a soda, or even an iced Macchiato. The star for us here was the consistency and texture of the lemon curd that whiplashed a reminder of tanginess on our tongue. We recommend this.

What in the world is Viennoiserie? Viennno-what??? Let us explain. Viennoiserie is the ‘bridge' between pâtisserie and French bread. Easily put, if it's not bread, it is probably a pâtisserie, but if it is similar to bread and has a sweet and sometimes flaky quality, it's a viennoiserie. Windowsill Pies have 3 main selections for their Viennoiserie range: The Viennoiserie Box of Classics, the Viennoiserie Box of Cruffins and the Viennoiserie Box of sweets.
The Viennoiserie Box of Classics ($21)
Let's get back to basics here at Bestreviews.sg. The classic viennoiserie series presented us with an unpretentious checkered blue cardboard box containing an Almond Croissant, a Cinnamon Twist, a classic Butter Croissant, 1 Kouign Amann and 1 Pain Au Chocolat À L'Orange.
You know what they say, to know a baker, try the basics. The classics. Wow, what can we say? The Kouign Amann was so enjoyable; you could taste the laminated dough and layers of butter, so rich yet so airy. The cinnamon twist was laden with a burst of earthly and spicey notes and had a firm crunch. The Pain Au Chocolat À L'Orange was a gem, too; we all know chocolate and orange deliver an unbeatable combination. Rows of chocolate orange segments and a mastery of French baking classics give this Viennoiserie bragging rights.

The Viennoiserie Box of Cruffins ($31.90)
The cruffin series came with 3 Lemon Cheesecake Cruffins and 3 Pandan Custard Cruffins. I personally found the lemon cheesecake cruffin to be like a light croissant, shaped like a muffin and filled with a sort of cream cheese and lemon creme mix. It was love at first bite. I paired it with a simple cappuccino, and all was well with my soul. The pandan custard cruffins somehow take me back to Indonesia, with pandan scents wafting through the air. How could something so crunchy and airy be so rich and light at the same time, you may ask? Well, as a staple on the cruffins board, you know the pandan cruffin cannot go wrong.

Unpretentious, underrated and honest is our concluding statement. We could not fault Windowsill Pies' pies or Viennoiseries. We found their techniques, presentation and taste points to be authentic to the art of baking and pie making.
Overall we were very impressed with this artisanal bakery that produced fresh pies and Viennoiseries for their loyal base of customers. Now with 3 outlets islandwide and delivery (Free above $100), what excuse does one have to abstain? Go for it, we say!
